Yes, but it needs planning. Products are grouped into categories with consistent page templates, and for larger catalogues an admin panel lets your team add and edit entries without touching code.

Can our staff update the site themselves after launch?

Where the project includes an admin panel, yes. This is worth deciding at the planning stage, because it affects how the site is built.

Our current site is old but ranks on Google. Will a redesign hurt that?

It should not if handled carefully. Existing page addresses are kept or redirected, and content that already performs is preserved rather than rewritten for the sake of it.
